2 Tbsp extra-virgin
olive oil
1 onion, chopped
2 cloves garlic, crushed
2 potatoes, cubed
2 carrots, sliced
4 zucchini, sliced
1 tsp dried basil
Black pepper, to taste
4 c low sodium vegetable broth
DIRECTIONS

Add all the
ingredients into your slow cooker.
Cover.
Cook on Low 7 to 8 hours or (High 4 to 6 hours), or until veggies
are tender.
